A government report has shown that the quality and balance of essential minerals in food has deteriorated over the last 70 years. This has been caused by the depletion of minerals from our soil.

The minerals in soil initially come from rock and only a small amount is released (solubilised) each growing season. Because of intensive farming and natural rain erosion, these minerals have been washed out of the land and back in to the sea over time.

Annual rate of erosion of minerals from the soil ranges from 6-120 tons per square mile per year.

This varies depending on rainfall, intensity of cultivation, soil structure.

The most soluble of all of the minerals, common salt, was washed away first which is why there is so little salt found on land.

Old style farming practices that put back decaying animal and vegetable waste as fertilizer returned the minerals to the soil substantially in the same proportions as they had been cropped.

The addition of large amounts of nitrogen, phosphorous & potassium with only a few trace elements blocks the uptake of the other minerals that are less available in the soil.

Research undertaken focussing on the period between 1940 and 1991 shows a depletion of between 16% and 76% of individual minerals. The only increase is phosphorous which is not surprising considering how much is added as fertilizer.
